About the Role: Meat Cutter

Working as a Meat Cutter at Costco, you’ll be responsible for cutting, trimming, and preparing raw meat to exact Costco specifications using equipment such as the band saw, knives, automatic slicer, tenderizing machine, and roast tyer. You’ll inspect and reassemble equipment each morning, assess daily production needs, rework and restock the display case, and manage product rotation in the cooler. Physical demands are real — you’ll be lifting cases of meat up to 80 lbs regularly.

Compliance with health and food safety standards is a core part of this job. You’ll follow all Sanitation Standard Operating Procedures (SSOPs) throughout your shift, maintain proper temperatures, perform routine equipment maintenance, and check fat content on each batch from the grinder. Member service is also part of the equation — you’ll be expected to provide courteous, prompt assistance to Costco members whenever needed.

Responsibilities

Each shift as a Meat Cutter involves a consistent cycle of production, safety, and service. From the moment you start, you’re assessing what needs to be cut, what needs to be restocked, and making sure every piece of product leaving the department meets Costco’s quality standards. Here’s a breakdown of what the role looks like day to day:

  • Inspect and reassemble equipment sanitized the previous night before beginning production
  • Rework and restock the display case daily, assessing production needs and rotating product
  • Receive and rotate meat in the cooler, scan inventory, rework and destroy as required
  • Lift and transport cases of meat up to 80 lbs from the cooler to the cutting or preparation area
  • Cut and trim meat to Costco specifications using a band saw, knives, or automatic slicer
  • Operate the tenderizing machine, roast tyer, and meat grinder; check fat content on each batch
  • Transfer cut and ground meat to styro trays and load onto racks for wrappers; assist with wrapping and stocking the meat case
  • Clean and sanitize the work area throughout the day, following all SSOPs and health code requirements
  • Perform routine maintenance on machinery and equipment
  • Set up and conduct seafood road shows per the Costco Seafood Road Show manual
  • Provide prompt and courteous member service at all times

Requirements / Skills

Costco is looking for a candidate who already has hands-on meat cutting experience and can demonstrate competency through the company’s own cutting test. You’ll need to be physically capable, safety-conscious, and committed to following established production and sanitation procedures from day one.

  • Meat cutting experience is required — this is not an entry-level role
  • Must pass the Costco meat cutting test as part of the hiring process
  • Food Safety Certification – Level 1 is required on your first day in the position
