Responsibilities

The Meat Cutter role covers a full range of production and service tasks within the meat department. From the moment the shift begins, you’ll be inspecting equipment, assessing daily production needs, and keeping the display case properly stocked and rotated. These responsibilities are critical to ensuring Costco members receive fresh, well-presented product every time they visit.

  • Inspect and reassemble equipment sanitized from the previous night, and assess daily production needs by reworking and restocking the display case
  • Receive and rotate meat in the cooler, scan inventory, rework product, and destroy items as required
  • Transport meat cases weighing up to 80 lbs from the cooler to the cutting or preparation area
  • Cut and trim meat to Costco specifications using a band saw, knives, or automatic slicer; operate tenderizing machine and roast tyer following all safety procedures
  • Operate the meat grinder, monitor fat content of each batch, and maintain quality and consistency standards for finished product
  • Transfer and load cut and ground meat into styro trays, assist with wrapping, and stock the meat case according to the Meat Manager’s merchandising plan
  • Clean and sanitize the work area throughout the day, following all SSOPs and health code requirements including proper temperature maintenance
  • Perform routine maintenance on machinery, equipment, and implements
  • Set up and conduct seafood road shows as outlined in the Costco Seafood Road Show manual
  • Deliver prompt and courteous member service at all times

Requirements / Skills

Costco is looking for a candidate with real meat cutting experience and the technical ability to pass Costco’s own meat cutting assessment. You’ll need to be comfortable working in a physically demanding, fast-moving environment while maintaining high standards for food safety and product quality.

  • Meat cutting experience is required — this is a skilled trade role, not an entry-level position

  • Food Safety Certification — Level 1 is required from the first day in the position
