Responsibilities

The Meat Cutter role covers the full scope of daily meat department operations. From equipment inspection first thing in the morning to cleaning and sanitising throughout the day, you’ll play a key part in maintaining product quality and departmental efficiency. Here’s what the day-to-day looks like:

  • Inspect and reassemble equipment sanitised from the previous night and assess daily production needs
  • Receive and rotate meat in the cooler, scan inventory, rework product, and process any necessary destruction of items
  • Transport cases of meat (up to 80 lbs) from the cooler to the cutting and preparation area
  • Cut and trim meat to Costco specification using a band saw, knives, or automatic slicer; operate the tenderizing machine and roast tyer
  • Operate the meat grinder and check fat content of each batch to ensure consistency and quality standards
  • Package and transfer cut and ground meat to styro trays, load onto wheeled racks, and assist with wrapping and stocking the display case
  • Clean and sanitise the work area throughout the shift in compliance with health codes and all SSOPs
  • Perform routine maintenance on machinery, equipment, and tools
  • Set up and operate seafood road shows as outlined in the Costco Seafood Road Show manual
  • Provide prompt and courteous member service at all times

Requirements / Skills
