Responsibilities
The Meat Cutter role at Costco covers a wide range of production and sanitation duties throughout the workday. - Inspect and reassemble equipment sanitized from the previous night, and assess daily production needs by reworking and restocking the display case
- Receive and rotate meat in the cooler; scan inventory, rework, and destroy as appropriate
- Transport meat cases (up to 80 lbs) from the cooler to the cutting or preparation area
- Cut and trim meat to Costco specifications using a band saw, knives, or automatic slicer; operate the tenderizing machine and roast tyer while following all safety and security procedures
- Operate the meat grinder, check fat content of each batch, and maintain proper department production standards for quality and consistency
- Transfer and stage cut and ground meat onto styro trays and wheeled racks for wrappers; assist with wrapping and stocking the meat case per the Meat Manager’s merchandising plan
- Clean and sanitize the work area throughout the day in compliance with health codes, proper temperature standards, and Sanitation Standard Operating Procedures (SSOPs)
- Perform routine maintenance on machinery, equipment, and implements
- Set up and execute seafood road shows as outlined in the Costco Seafood Road Show manual
- Provide courteous member service and assist in other areas of the warehouse as needed
