About the Role: Meat Cutter
This position goes well beyond basic cutting and trimming. You’ll be responsible for inspecting and reassembling equipment, managing cooler inventory, operating specialty machinery, and maintaining consistent product quality throughout your shift. Every batch from the grinder is checked for fat content, and finished product is transferred to trays and staged for the wrapping team — all while keeping the meat case fully stocked and visually merchandised according to the Meat Manager’s plan.
A strong commitment to food safety and sanitation is central to this role. You’ll follow all Sanitation Standard Operating Procedures (SSOPs), comply with health code requirements including proper temperature maintenance, perform routine machinery upkeep, and occasionally set up and run the Costco Seafood Road Show. Member service is part of the job too — you’ll be expected to interact with members in a prompt and courteous manner at all times.

Responsibilities
As a Meat Cutter at Costco Scarborough, your shift will involve a mix of production work, equipment operation, and food safety compliance. Each task plays an important role in keeping the meat department running efficiently and ensuring members receive a quality product every time.
- Inspect and reassemble equipment sanitized the night before at the start of each shift
- Rework and restock the display case daily based on production needs, rotating product appropriately
- Receive and rotate meat in the cooler; scan inventory, rework, and destroy as required
- Transport cases of meat up to 80 lbs from the cooler to the cutting or preparation area
- Cut and trim meat to Costco specifications using band saw, knives, or automatic slicer; operate tenderizing machine and roast tyer
- Operate the meat grinder, check fat content of each batch, and follow department production procedures for quality and consistency
- Transfer cut and ground meat to styro trays and stage on wheeled racks for wrappers; assist with wrapping and stocking the meat case
- Clean and sanitize the work area throughout the day, following all SSOPs and health code requirements
- Perform routine maintenance on machinery and equipment
- Set up and operate the Costco Seafood Road Show as outlined in the department manual
- Provide prompt and courteous member service at all times
Requirements / Skills
Costco is looking for a candidate with hands-on meat cutting experience and the technical know-how to work safely and efficiently in a production environment. You’ll need to demonstrate your skills through a Costco meat cutting test, so confidence with industry-standard equipment is a must.
- Meat cutting experience is required — this is a skilled trade position, not entry-level
- Food Safety Certification – Level 1 is required from your first day in the role

- High School Diploma or GED is preferred
- Physical capability to lift and transport cases of meat up to 80 lbs
