About the Role: Meat Cutter
As a Meat Cutter at Costco Ajax, your primary responsibility is to cut, trim, and prepare raw meat for sale using a variety of equipment including band saws, knives, a grinder, a tenderizing machine, and a roast tyer. You’ll work in the cooler and on the cutting floor, handling cases of meat up to 80 lbs, and you’ll be responsible for everything from receiving and rotating inventory to stocking the display case according to the Meat Manager’s plan.
Maintaining health code compliance and following all Sanitation Standard Operating Procedures (SSOPs) is a non-negotiable part of this role. You’ll also be expected to perform routine machinery maintenance, assist with wrapping, support the seafood road show when needed, and deliver prompt and courteous member service throughout your shift.

Responsibilities
The Meat Cutter role at Costco Ajax involves a wide range of daily tasks that require both technical skill and physical stamina. You’ll move between the cooler, the cutting floor, and the sales floor, keeping everything running smoothly and to Costco’s exacting standards.
- Inspect and reassemble equipment sanitized from the previous night, ensuring all tools and machinery are ready for the day’s production
- Receive and rotate meat in the cooler, scanning inventory and reworking or destroying product as required
- Transport cases of meat up to 80 lbs from the cooler to the cutting and preparation areas
- Cut and trim meat to Costco specifications using band saws, knives, and automatic slicers
- Operate the tenderizing machine, roast tyer, and meat grinder, checking fat content of each batch for quality and consistency
- Transfer cut and ground meat to styro trays and load onto wheeled racks for the wrapping team; assist with wrapping as needed
- Stock the meat display case according to the Meat Manager’s merchandising plan
- Clean and sanitize the work area throughout the day in compliance with health codes and SSOPs
- Perform routine maintenance on machinery and equipment
- Set up and conduct the seafood road show as outlined in the Costco Seafood Road Show manual
- Deliver courteous member service and assist in other areas of the warehouse as needed
Requirements / Skills
Costco is looking for a candidate who brings proven meat cutting experience and takes quality, safety, and food handling seriously. You’ll need to pass Costco’s own meat cutting assessment and hold the appropriate food safety certification from day one.
- Meat cutting experience is required — this is a skilled trade role and prior hands-on experience is essential
- Food Safety Certification – Level 1 must be in place by your first day on the job
- Must pass Costco’s internal meat cutting test as part of the hiring process
- High School Diploma or GED is preferred but not mandatory
- Physical capability to lift and carry cases of meat up to 80 lbs on a regular basis
- Knowledge of sanitation standards and safe food handling practices, including proper temperature maintenance
