About the Role: Meat Cutter
As a Meat Cutter at Costco Richmond, your day begins with inspecting and reassembling equipment that was sanitized the night before, then assessing the display case to determine daily production needs. You’ll operate a range of equipment — including band saws, knives, meat grinders, tenderizing machines, and automatic slicers — to prepare meat according to Costco’s quality and consistency standards. You’ll also handle cases of meat weighing up to 80 lbs, transfer cut product to styro trays, and assist with stocking the meat case following the Meat Manager’s merchandising plan.
Beyond the cutting itself, this role requires strong attention to food safety compliance. You’ll be expected to clean and sanitize your work area throughout the day, maintain proper temperatures, and follow all Sanitation Standard Operating Procedures (SSOPs). Routine machinery maintenance and the occasional seafood road show setup are also part of the position. You’ll work closely with the wider meat department team and step into other areas of the warehouse when needed.

Responsibilities
The Meat Cutter role at Costco Richmond covers a full range of tasks from production and cutting to sanitation and member service. Every responsibility is tied to delivering consistent, high-quality product while keeping the department running safely and efficiently.
- Inspect and reassemble equipment sanitized the previous night, and assess the display case to determine daily production needs
- Receive and rotate meat in the cooler, scan inventory, rework product, and process destroys as required
- Transport cases of meat up to 80 lbs from the cooler to the cutting or preparation area
- Cut and trim meat to Costco specifications using a band saw, knives, or automatic slicer, following all safety and security procedures
- Operate the meat grinder, tenderizing machine, and roast tyer, checking fat content of each batch to meet quality and consistency standards
- Transfer cut and ground meat to styro trays, assist with wrapping, and stock the meat case per the Meat Manager’s merchandising plan
- Clean and sanitize the work area throughout the day and adhere to all health codes, temperature requirements, and SSOPs
- Perform routine maintenance on machinery and equipment as needed
- Set up and conduct seafood road shows as outlined in the Costco Seafood Road Show manual
- Deliver prompt and courteous service to Costco members at all times
Requirements / Skills

- Meat cutting experience is required — applicants must be able to demonstrate practical skills on the job

- High School Diploma or GED is preferred
