About the Role: Meat Cutter

As a Meat Cutter at Costco Mississauga, your primary responsibility is to cut, trim, and prepare raw meat for sale using a variety of equipment — including band saws, knives, grinders, tenderizers, roast tyers, and automatic meat slicers. You’ll inspect and reassemble sanitized equipment at the start of each shift, assess daily production needs, and ensure product is properly rotated in the display case and cooler.

Responsibilities

The Meat Cutter role at Costco involves a wide range of daily tasks that keep the meat department running smoothly and safely. From handling heavy cases of product to operating specialized equipment, this position demands both physical capability and technical skill.

  • Inspect and reassemble equipment sanitized from the previous night, ensuring readiness before the shift begins
  • Rework and restock the display case to assess daily production needs and properly rotate product
  • Receive and rotate meat in the cooler, scanning inventory and handling reworks and destruction of expired product
  • Transport cases of meat up to 80 lbs from the cooler to the meat cutting or preparation area
  • Cut and trim meat to Costco specifications using band saws, knives, or automatic slicers; operate tenderizing machines and roast tyers while following all safety procedures
  • Operate the meat grinder, check fat content of each batch, and adhere to department production standards for quality and consistency
  • Transfer cut and ground meat to styrofoam trays and assist with wrapping and stocking the meat case per the Meat Manager’s merchandising plan
  • Clean and sanitize the work area throughout the day, maintaining proper temperatures and following all Sanitation Standard Operating Procedures (SSOPs)
  • Perform routine maintenance on machinery, equipment, and implements
  • Set up and assist with seafood road show as outlined in the Costco Seafood Road Show manual
  • Provide prompt and courteous member service at all times
