About the Role: Meat Cutter

Responsibilities

The day-to-day work of a Meat Cutter at Costco is varied and physically demanding, requiring both precision and efficiency. Each shift involves preparing the department for the day, processing large quantities of meat, and keeping the workspace clean and compliant with food safety standards.

  • Inspect and reassemble equipment sanitized from the previous night before beginning production
  • Restock and rework the display case each morning to assess daily production needs and rotate product
  • Receive and rotate meat in the cooler, scanning inventory, reworking product, and destroying items as needed
  • Transport cases of meat weighing up to 80 lbs from the cooler to the cutting or preparation area
  • Cut and trim meat to Costco specifications using band saw, knives, or automatic slicer; operate tenderizing machine and roast tyer
  • Operate the meat grinder, monitoring fat content of each batch for quality and consistency
  • Transfer and load cut and ground meat to styro trays; assist with wrapping and stocking the meat case per the Meat Manager’s merchandising plan
  • Clean and sanitize the work area throughout the day, following all SSOPs and health code requirements
  • Perform routine maintenance on machinery and equipment
  • Set up and conduct seafood road shows as outlined in the Costco Seafood Road Show manual

Requirements / Skills

Costco is looking for a candidate with genuine meat cutting experience and the technical know-how to work safely and efficiently in a busy meat department. The right person takes food safety seriously and can pass Costco’s own internal assessment.

  • Meat cutting experience is required — this is not an entry-level position
