As a Meat Cutter at Costco Calgary, you’ll be responsible for the full cycle of meat preparation — from receiving and rotating product in the cooler all the way through to stocking the display case. You’ll handle cuts of meat up to 80 lbs, operate and maintain a range of equipment, and follow strict health and safety standards throughout every shift.

Working in a team environment, you’ll also collaborate with wrappers and support the Meat Manager’s plan for product presentation and merchandising. Compliance with Sanitation Standard Operating Procedures (SSOPs) and food safety regulations is a core part of the job, as is delivering prompt and courteous service to Costco members.

Responsibilities

The Meat Cutter role at Costco Calgary covers a wide range of duties throughout each shift. From equipment checks first thing in the morning to sanitising the work area throughout the day, you’ll be expected to maintain a high standard of quality, consistency, and food safety compliance at all times.

  • Inspect and reassemble equipment sanitised the previous night, and assess daily production needs by reworking and restocking the display case
  • Receive and rotate meat in the cooler, scan inventory, rework, and destroy product as required
  • Transport cases of meat (up to 80 lbs) from the cooler to the cutting or preparation area
  • Cut and trim meat to Costco specifications using a band saw, knives, or automatic slicer; operate the tenderizing machine and roast tyer following all safety and security procedures
  • Operate the meat grinder, check fat content of each batch, and follow proper production procedures and standards for quality and consistency
  • Transfer cut and ground meat to styro trays and load onto wheeled racks for wrappers; assist with wrapping and stocking the meat case according to the Meat Manager’s merchandising plan
  • Clean and sanitise the work area throughout the day in compliance with health codes, sanitation standards, and proper temperature maintenance; follow all SSOPs
  • Perform routine maintenance on machinery, equipment, and implements
  • Set up and conduct seafood road shows as outlined in the Costco Seafood Road Show manual
  • Deliver prompt and courteous service to Costco members at all times
  • Assist in other areas of the warehouse as needed

Requirements / Skills

This role is best suited to someone with hands-on meat cutting experience and a strong understanding of food safety standards. Costco holds its meat department to a high standard, so candidates need to demonstrate both technical skill and a commitment to safety, quality, and consistency.

  • Meat cutting experience is required; candidates must pass Costco’s meat cutting test
  • Food Safety Certification – Level 1 is required on the first day in the position
  • High School Diploma or GED is preferred
  • Physical capability to handle cases of meat weighing up to 80 lbs
  • Knowledge of sanitation standards and ability to follow health code requirements including proper temperature maintenance
  • For positions at Quebec locations, candidates must be able to communicate in French (oral and written)
