Day to day, you’ll be cutting, trimming, and preparing raw meat for sale according to Costco’s specifications, keeping the display case stocked and rotated, and maintaining a clean, safe work area throughout your shift. The role goes beyond just cutting — you’ll also be involved in inventory management, equipment maintenance, and even seafood road show setups.

About the Role: Meat Cutter

As a Meat Cutter at Costco Calgary, you’ll work with a range of equipment — including band saws, knives, meat grinders, tenderizing machines, and automatic slicers — to prepare product to Costco’s exacting standards. You’ll start your day by inspecting and reassembling equipment that was sanitized the night before, then move into production based on what the display case needs. Bringing meat cases weighing up to 80 lbs from the cooler is part of the regular routine, so physical stamina is a must.

Beyond the cutting itself, you’ll be expected to follow strict health code and sanitation protocols, including Sanitation Standard Operating Procedures (SSOPs), proper temperature maintenance, and food safety compliance. Teamwork is central to this role — you’ll assist with wrapping, stocking the meat case according to the Meat Manager’s merchandising plan, and stepping in elsewhere in the warehouse when needed.
