Responsibilities
The Meat Cutter role at Costco Edmonton covers a wide range of daily tasks that keep the meat department running smoothly and efficiently. From opening equipment checks through to end-of-day sanitation, every part of the process matters for product quality and member satisfaction.
- Inspect and reassemble equipment sanitized the previous night, ensuring everything is ready for the day’s production

- Receive and rotate meat in the cooler, scanning inventory and processing reworks and destructions as needed
- Bring cases of meat weighing up to 80 lbs from the cooler to the cutting or preparation area
- Cut and trim meat to Costco specifications using band saw, knives, or automatic slicer; operate tenderizing machine and roast tyer following all safety procedures
- Operate the meat grinder, check fat content of each batch, and maintain proper production standards for quality and consistency
- Transfer and load cut and ground meat onto styro trays and racks for wrappers; assist with wrapping and stocking the meat case
- Clean and sanitize the work area throughout the day in compliance with health codes and SSOPs
- Perform routine maintenance on machinery, equipment, and implements
- Set up and conduct seafood road shows as outlined in the Costco Seafood Road Show manual
- Provide prompt and courteous member service at all times
Requirements / Skills
Costco is looking for a candidate with hands-on meat cutting experience and a solid understanding of food safety practices. You’ll need to be comfortable with physical demands and have the technical skills to work efficiently across a range of equipment.
- Meat cutting experience is required for this position — this is not an entry-level role
