About the Role: Meat Cutter
This position goes well beyond basic cutting duties. You’ll also help manage display case merchandising and support the wrapping team.
Safety and sanitation are non-negotiable at Costco. You’ll be expected to follow all Sanitation Standard Operating Procedures (SSOPs), maintain proper food temperatures, and comply with health codes throughout every shift. Responsibilities
Working in Costco’s meat department means staying on top of multiple tasks at once — from equipment checks at the start of the day to restocking and sanitizing at the end. Every responsibility ties directly to food quality, member satisfaction, and departmental efficiency.
- Inspect and reassemble equipment sanitized from the previous night and assess daily production needs
- Receive and rotate meat in the cooler, scan inventory, and manage reworks and product destruction as needed
- Transport meat cases up to 80 lbs from the cooler to the meat cutting and preparation area
- Cut and trim meat to Costco specifications using band saw, knives, or automatic slicer
- Operate the meat grinder, checking fat content of each batch to ensure product consistency and quality standards
- Transfer and load cut and ground meat onto styro trays and wheeled racks, and assist with wrapping and stocking the meat case
- Clean and sanitize the work area throughout the day in compliance with health codes and SSOPs
- Perform routine maintenance on machinery and equipment used in the department
- Set up and execute seafood road shows as per the Costco Seafood Road Show manual
- Deliver prompt and courteous service to Costco members at all times
Requirements / Skills
