Responsibilities
The Meat Cutter role at Costco involves a wide range of physical and technical tasks across the full meat department workflow. From handling raw product in the cooler to presenting finished cuts in the display case, every step requires attention to detail and a strong understanding of food safety practices.
- Inspect and reassemble equipment sanitized from the previous night, and assess daily production needs by reworking and restocking the display case
- Receive and rotate meat in the cooler; scan inventory, rework, and destroy product as needed
- Transport cases of meat weighing up to 80 lbs from the cooler to the cutting or preparation area
- Cut and trim meat to Costco specification using a band saw, knives, or automatic slicer; operate the tenderizing machine and roast tyer
- Operate the meat grinder and check the fat content of each batch to ensure product quality and consistency
- Transfer cut and ground meat to styro trays and assist with wrapping and stocking the meat case according to the Meat Manager’s merchandising plan
- Clean and sanitize the work area throughout the day and follow all SSOPs and health code requirements
- Perform routine maintenance on machinery, equipment, and tools used in the department
- Set up and operate the seafood road show as described in Costco’s Seafood Road Show manual
- Provide prompt and courteous service to Costco members throughout the shift
Requirements / Skills
Costco is looking for a candidate who brings proven meat cutting experience and a solid understanding of food safety standards. The ideal person is physically capable, detail-oriented, and committed to maintaining both product quality and a safe work environment.
- Meat cutting experience is required — candidates must also pass Costco’s meat cutting test
- Food Safety Certification – Level 1 is required from the first day in the position
- High School Diploma or GED is preferred
- Physical capability to lift and carry cases up to 80 lbs regularly throughout the shift
- Knowledge of sanitation standards and the ability to maintain compliance with health code requirements
- Ability to operate meat department equipment including band saws, grinders, tenderizers, slicers, and roast tyers safely and effectively
