About the Role: Meat Cutter
This is a hands-on position that involves cutting, trimming, and preparing raw meat for sale using a variety of equipment including a band saw, knives, grinder, tenderizer, roast tyer, and automatic meat slicer. You’ll also take on the full range of duties associated with the meat assistant role, making this a comprehensive position within the department.
Working in compliance with health codes and sanitation standards is a core part of this role. You’ll follow all Sanitation Standard Operating Procedures (SSOPs), maintain proper product temperatures, and keep your work area clean and safe throughout the day. Teamwork and member service are equally important — you’ll be expected to step up wherever the warehouse needs you.

Responsibilities
Day to day, a Meat Cutter at Costco is responsible for a wide range of production and sanitation tasks that keep the meat department running smoothly. From receiving and rotating product in the cooler to preparing finished cuts for display, every task contributes to the quality members expect when they shop at Costco.
- Inspect and reassemble equipment sanitized the previous night to ensure it’s ready for the day’s production
- Rework and restock the display case, assess daily production needs, and rotate product to maintain freshness
- Receive and rotate meat in the cooler; scan inventory, rework, and destroy product as needed
- Transport cases of meat weighing up to 80 lbs from the cooler to the cutting or preparation area
- Cut and trim meat to Costco specifications using a band saw, knives, or automatic slicer; operate the tenderizing machine and roast tyer
- Operate the meat grinder, check fat content of each batch, and follow department production procedures for quality and consistency
- Transfer cut and ground meat to styro trays and assist with wrapping and stocking the meat case per the Meat Manager’s merchandising plan
- Clean and sanitize the work area throughout the shift; follow all SSOPs and health code requirements
- Perform routine maintenance on machinery and equipment; set up and carry out seafood road shows as required
- Provide prompt and courteous service to Costco members at all times
Requirements / Skills
